Most beans sitting on store shelves were roasted weeks, sometimes months, ago. That’s not what we do. At Headcount Coffee, we roast organic, fair trade coffee beans in small batches and ship them while they’re at their peak, still full of the natural oils and aromas that make great coffee unforgettable.

Why small-batch roasting matters

When you roast in small batches, you can treat each origin the way it deserves. Our Brazil Cerrado brings smooth chocolate and nut notes. The Mexican FTO offers subtle spice and sweetness. And our Ethiopian Yirgacheffe lights up with fruit and floral tones. Every roast gets its own curve, temperature, and attention because we believe coffee should taste like where it came from, not just “dark” or “light.”

We built this roastery from the ground up in small-town Texas. Early mornings, hot roaster drums, and that unmistakable first-crack aroma, those are our daily rituals. And while our home will always be in Texas, our goal has always been bigger: to share truly fresh roasted coffee nationwide. Why freshness changes everything

  • Days 1–7: Coffee is degassing, that bloom you see when brewing is CO₂ escaping and aroma exploding.
  • Days 3–21: Peak flavor. Balanced sweetness, body, and brightness.
  • After 30 days: Still drinkable, but that sparkle starts to fade. That’s why we roast to order.

How to know your coffee is fresh

  1. Check the roast date: Every bag we send lists it proudly, it is built into the batch number. If it’s not there, ask why.
  2. Open the bag: You should smell nuts, cocoa, fruit, or a sweetness not cardboard.
  3. Brew and watch it bloom: Try our French press guide. If it domes and bubbles, it’s alive with freshness.

Storage tips for staying fresh

  • Keep beans sealed in their valve bag.
  • Store cool, dark, and dry, no fridge, no sunlight.
  • Grind right before brewing for the biggest flavor impact.
